Peanut banana bread

2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup sugar
4 very ripe bananas
1 teaspoon vanilla
1/2 cup vegetable oil
1 teaspoon cinnamon
1 cup grounded peanut


Directions
Preheat oven to 350 degrees. In a medium bowl combine flour, baking soda and powder, salt. In a large bowl cream together eggs and sugar. Stir in mashed bananas,peanut, vanilla, oil and cinnamon. Stir in flour mixture, a third at a time, until just combined. Divide batter into two 9x5 loaf pans. Bake for about 1 hour

Potato peppers and chive casserole

4 cups cubed potatoes
1 teaspoon salt
1 cup milk
1 (8-ounce) package cream cheese, softened
1 tablespoon chopped chives, fresh or frozen
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon instant dried minced onion
1\2 cup finely diced bell peppers

Method
Cook potatoes with 1 teaspoon salt in boiling water to cover 15 minutes or until tender; drain. Place cooked potatoes in a shallow, lightly greased 2-quart casserole. Heat milk and cream cheese in a medium saucepan, stirring until cheese is melted. Add chives, salt, pepper, and dried onion; pour over potatoes. Bake, uncovered, at 350° for 30 minutes. Sprinkle with chives and bell peppers, if desired.

Shrimp chowder

Tonight at work i made a wonderful shrimp chowder ,i got a cup of kernel corn,a cup of onion, one cup of finely diced carrot,a cup of finely diced bell pepper(red,and yellow), half cup of leeks, a cup of potatoes, half cup celery and one cup of diced shrimp.


I had some seafood stock made from the day before, placed a pot on medium heat add a table spoon of olive oil then place the onion,leeks, celery and potato in hot pan to saute, to this i added a little flour to make a roux, then i added three cups of seafood stock, two cups milk and two cups heavy cream,i allowed it to come to a simmer and start to thicken, when its at the right consistency it should coat the spoon when dipped into the chowder.

Then i added the rest of vegetables, shrimp and one cup of white wine and three table spoons of brandy, salt and pepper to taste serve thirty.

Alfredo sauce

Finely dice a half cup of onions and three cloves of garlic place a sauce pan on medium heat add two table spoons of olive oil to to pan , when hot add onion and garlic, saute, add a table spoon off butter ,when melted add a half cup of flour to make white roux, add three cups of milk and three cups of heavy cream turn the flame to low and continually whisk while it comes to a slow simmer.

Allow to simmer for five minutes then add 2 cups of white wine, three bay leaves one table spoon of fresh chopped basil, salt and pepper to taste simmer for two more minutes, then your finished.

This can be served with pasta ,either lingiene or fussili what ever type you want to use, you can cook some prawns and serve it with rice and Alfredo sauce or if you don't want too much carbohydrate you can saute some garden vegetable and serve it with the sauce, goodby until tomorrow
